Rice with Tomato

For the second day of Arabian cuisine I made rice with tomatoes.It’s a very simple yet flavorful one pot meal that could be enjoyed in lunch or dinner with any curry.

Ingredients:
2 cup basmati rice
2 onions chopped
4 tomatoes chopped
1 teaspoon turmeric powder
1 bay leaf
2 cardamom pods,crushed
1 teaspoon coriander seeds
1/2 teaspoon ground black pepper
2 cloves garlic, chopped
2 tablespoon vegetable oil
Salt to taste
water as required

Method:

Heat oil in a pot and sauté onions and garlic for few minutes.

Add tomatoes, turmeric powder, bay leave, cardamom pods, coriander seeds, black pepper.Stir and add Basmati rice.

Mix well and cook for 3 minutes.
Add water and cover the pot. Cook rice for 20 minutes or until done.

Serve hot.

Enjoy!!
