Rava Medhu Vada

Rava Medhu Vada Recipe is a super easy and yet very addictive medhu vada made using rava/semolina and minimal spices. This vada is super quick to make and pairs amazingly with tea.

Rava Medhu Vada:

This Rava Medhu Vada recipe is super quick if you don’t want to do the whole soaking and grinding the urad dal process like regular medhu vada. We all loved the crispy deep fried vada with our evening tea and had a wonderful tea time snack.

My family loves South Indian food and always ask me to make something like Upma, dosa, vada or uttapam. I mean they are always ready for anything from South Indian cuisine. So I always looking for easy and quick recipes to try the particular cuisine.

There are a lot of recipes, I need to try as South Indian cuisine is so vast. This rava medhu vada was on my to-do list to try and finally I made these last weekend and I am so glad I did try these. I have adapted the recipe from Hebbars kitchen and they came out perfect, well not the shape but the taste was amazing. As of now, I know that I can make it whenever those sudden hunger pangs pock us to eat vada.

Basic Ingredients for Vada:

  • First, Fine semolina- I have made it a couple of times with fine semolina, never tried with the coarse one.
  • Yogurt-Plain natural yogurt is perfect for the recipe.
  • Onion- Brings nice flavors.
  • Green Chilli- For that extra heat.
  • Coriander leaves-Adds a nice flavor

How to make Rava Medhu Vada?

To make the rava medhu vada, the first step ids to mix rava with yogurt and leave sit for some time. After that add the rest of the ingredients and make a thick soft batter.

Once the batter is ready, deep fry the vada in medium hot oil. Serve right away.

Serving Suggestions:

Serve the crispt deep-fried rava medhu vada with peanut chutney, coconut, or mint chutney. You may pair it with hot masala chai as well.

Equipment

Ingredients
  

  • 1 1/2 cups fine semolina
  • 2 cups yogurt
  • 1 small onion, finely chopped
  • 2 green chillies, chopped
  • 1/4 cup coriander leaves, chopped
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • few curry leaves
  • salt to taste
  • oil for deep frying

Instructions
 

  • In a mixing bowl add semolina and yogurt. Mix together until combines.
  • Let the semolina yogurt mixture sit for about 15 minutes.
  • Once yogurt is absorbed in semolina, add onions, green chilli, mustard seeds, cumin seeds salt, coriander leaves and curry leaves and give it a quick stir.
  • Heat oil in a wok or pan and let it be medium hot. 
  • Apply some water on your palms and take about a small ladleful of batter at a time in your hands.
  • Round the batter and make a dent in the center and carefully drop it in the hot oil.
  • Likewise, make rest of the vadas and deep fry on medium high heat from both sides until golden and crispy.
  • Drain the vada on kitchen towel papers and serve hot with any chutney and or with tea.

Notes

Fry only a few vada at a time to ensure even cooking.
If the batter seems too thick add a little bit of water and if it seems too thin add a tablespoon of semolina or rice powder.
Serve immediately as they taste better when warm only.

  1. By looking at the pictures, i thought it was urad dal vada. It looks just like medhu vada, perfectly made & looks delicious. Never tried vada with semolina before, bookmarked to try

  2. Wow, medu vada with rava, now that sounds like a very interesting and quick to make recipe. These vada look just like the regular ones — crispy on the outside and fluffy inside. They look very tempting indeed.
