A super easy and yet very addictive medhu vada made using rava/semolina and minimal spices. This vada is super quick to make and pairs amazingly with tea.
In a mixing bowl add semolina and yogurt. Mix together until combines.
Let the semolina yogurt mixture sit for about 15 minutes.
Once yogurt is absorbed in semolina, add onions, green chilli, mustard seeds, cumin seeds salt, coriander leaves and curry leaves and give it a quick stir.
Heat oil in a wok or pan and let it be medium hot.
Apply some water on your palms and take about a small ladleful of batter at a time in your hands.
Round the batter and make a dent in the center and carefully drop it in the hot oil.
Likewise, make rest of the vadas and deep fry on medium high heat from both sides until golden and crispy.
Drain the vada on kitchen towel papers and serve hot with any chutney and or with tea.
Notes
Fry only a few vada at a time to ensure even cooking.
If the batter seems too thick add a little bit of water and if it seems too thin add a tablespoon of semolina or rice powder.
Serve immediately as they taste better when warm only.
