Makhane ki Kheer is a very rich and delicious sweet dish made with roasted fox nuts/makhana and milk. It is super easy to make and needs only a few ingredients.
What is Makhana?
Makhana or as known as fox nut is a lotus seed, popularly used in Indian cooking to make both sweet and savory dishes. Being low in calories, high in protein, and gluten-free they are considered a perfect snack to munch on.
We in our house use makhana widely during Navratri acting and consume them roasted as a snack with tea.
Basic ingredients for makhane ki kheer?
The basic ingredients to make makhana kheer are listed below.
- Firstly, Makhana/Foxnut-Pick makhana and make sure there isn’t any part of the shell intact on it.
- Milk and Cream-Use full-fat whole milk and cream for the rich kheer.
- Sugar-Add more or less as per your taste.
- Nuts and Raisins-For the extra flavors and taste.
- Saffron and Cardamom-To give the kheer a nice aroma.
- Ghee- For roasting the makhana and nuts.
How to make Makhana Kheer?
The process of making this kheer starts with roasting the makhana in ghee on low heat until they become crispy. After that coarse grind, the makhana and meanwhile boil milk and put it for simmering.
Now add the coarse makhana in the milk along with saffron and cardamom powder. Cook until you get the desired thickness and garnish with chopped nuts and raisins.
There you go the kheer is done, let it cool and refrigerate to serve chilled.
Serving Suggestions:
Serve the kheer warm or chilled without any accompaniments. However, if you re fasting you can serve the kheer with Sabudana Khichdi, Rajgira Paratha, and Jeera Aloo.

Makhana Kheer
Equipment
- Heavy Bottom Pan
Ingredients
- 2 cups fox nut/makhana
- 1 liter milk
- 1/2 cup milk cream
- 2 cardamom crushed
- 1/4 cup sugar or as per taste
- 1/4 cup chopped nuts
- 1/4 cup clarified butter
- few strands saffron
Instructions
- Heat 2 tablespoons of clarified butter in a heavy bottom pan, add fox nut and roast them on low heat for 5-7 minutes till slightly golden in color.
- Cool and pulse gently to make a granulated powder.
- Roast chopped nuts in the same wok for 5 minutes and keep aside.
- Boil milk with cream in a heavy bottom pan. As it starts boiling add crushed cardamom, saffron strands and ground makhana. Let it cook for few minutes more.
- Add sugar and cook it for 10-15 minutes on low heat till it thickens.
- Remove from heat and serve warm or chilled.
