Linzer Cookies

Linzer cookies are buttery shortbread cookies made with almond meal and a hint of orange, sandwiched together with jam. They are one of the best Christmas edible gifts.

What are Linzer Cookies?

Linzer cookies are the popular Austrian cookies from Linz, the third-largest city of Austria. These cookies are made with buttery dough consisted of almonds, cinnamon, orange/lemon zest, and sandwiched together with fresh fruit preserves or jams.

The top of the cookie has a cutout (known as Linzer eyes) showing the jam-filled inside that makes it visually more appealing. Traditionally the cutout is circular in shape but nowadays any desired shape like a heart or star is used.

Normally Linzer cookies are made with eggs, but in this recipe, I have made them eggless. Linzer cookies make a wonderful treat for Christmas or would absolutely shine in your cookie box as an edible gif. This Christmas do try eggless Linzer cookies and enjoy the festivities.

Ingredients Needed for Linzer Cookies

  • Icing sugar: Icing sugar makes the best Linzer cookies.
  • Ghee: I have used clarified butter t make these cookies but you can use unsalted butter.
  • All-purpose flour: Plain flour or all-purpose flour to make the cookie dough.
  • Almond meal: Almond meal is the special ingredient in these cookies that makes them nutty and delicious.
  • Cinnamon and Orange zest: Adds a nice flavor.
  • Milk: To bind the dough.

How to make Linzer Cookies?

Step 1. Make Dough– In a mixing bowl beat ghee and sugar until light and fluffy pale in color. Add almond meal, flour, cinnamon, and orange zest. Mix well Add milk and knead a stiff dough.

Cling wrap and refrigerate for 30 minutes.

Step 2. Shape and Bake– Remove from refrigerator and roll between two parchment paper. Cut out the shapes. For one longer cookie, cut out two similar shapes and one small hole in one of the cookies.

Bake in preheated oven for 8-12 minutes or until done.

Step 3. Sandwich the cookies-Cool the cookies a bit. Dust the top layer cookies (the ones with holes) with icing sugar Fill jam and sandwich the cookies.

Serving Suggestions

Serve the cookies with a glass of milk, tea, coffee, or as it is. For Christmas parties, serve the cookies with a Christmas punch or your favorite Christmas drink.
