Eggless Orange Cake with Buttercream Frosting

It’s been two months since I have baked a cake and that is because my oven is playing pika boo with me . After resting for 1 month in the workshop last week I got my oven back . Tuesday was my In laws marriage anniversary and I want to bake a cake . As oranges are seasonal so I tried my hand for an orange cake . While I was looking for an eggless recipe I found this recipe on the back side of our astrology calendar . This calendar have lots of recipes and I always bought it every year just for the sake of getting more recipes.
Finally I baked the cake and immediately after the cake is done that oven again started giving a beep sound. Gosh ! It is down again and I don’t think this time it will by any chance get fixed. It seems I have to buy a new one and I am thinking for an OTG. Hope everything works out as planned. All right coming to the cake , I sent this cake over my In laws place and they liked it so much . Out of generosity I didn’t want to cut the cake as it was for them . But for a single click I cut a slice took a pic and insert the slice back to it’s place. And I was thinking Omg ! how far we can go for the clicks . Well I am sending this cake to +srivalli jetti ‘s CCChallenge . So let’s start the recipe . Yum

Ingredients:
For cake

1 cup Cake Flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon orange zest
1 teaspoon orange extract
1/4 cup walnuts , chopped (optional)
1/2 cup milk
1/4 cup yoghurt , beaten
1/2 cup unsalted butter
1/2 cup orange juice
3/4 cup castor sugar

For buttercream frosting
1/4 cup butter
1 1/2 cup icing sugar
2 tablespoon orange juice
A drop Food color

Method:
For cake
:
Preheat the oven at 180 degrees and grease and dust a 9 ” or 10 ” round pan.
Take sifted cake flour , baking soda , baking powder and salt in a bowl and set aside.
Mix milk with yoghurt and whisk it . Add sugar and butter and whisk again till frothy. Now add orange juice and orange extract in it. Mix well.

To this wet mixture add orange zest and sifted flours half at a time and gently fold in . At last add chopped walnuts . Mix well and pour the batter in cake baking pan.

Bake for 30 to 35 minutes at 180 degrees or till a toothpick inserted in the center comes out clean . Remove the cake from pan and cool on wire rack .


For frosting:

Take the butter @room temperature in a mixing bowl . Add half a cup icing sugar at a time and beat it with electric beater .
Beat again by adding the remaining icing sugar . Add orange juice and food color of your choice and beat till creamy. Fill the butter cream in piping bags and decorate the cake as per your choice.

Serve-6. Baking time -35 minutes

Note: You may skip walnuts in the recipe. The amount of sugar was good for us but if you want a bit more sweeter then add 1 cup of sugar.
You may eat the cake without frosting as well.
