This dish literally means Kheera=cucumber, Dahi=yoghurt, Bhaat=Rice. A very typical,easy and exotic dish ready in minutes and require no cooking expertise , I mean anyone can make it. Whenever I make it ,every time it taste the Same. hmmm awesome.It’s a healthy and refreshing cuisine rejuvenating your taste buds.The rice soaked in the yogurt and cucumber along with cumin seeds really give it quite a different experience. This recipe has been adapted from my oldie-Goldie diary which I have maintained when I was in sixth standard. So let’s start the recipe yum.
Ingredients:
2 cup boiled / precooked rice
1 cup cucumber , chopped with skin
1 cup beaten yoghurt/ curd
Salt to taste
1/4 cup coriander stems and leaves , chopped
For tempering:
1/2 teaspoon cumin seeds
1/2 teaspoon Split Bengal gram( chana dal)
1 tablespoon clarified butter
1/2 teaspoon red chilly powder
1 careen chilly , slits
Method:
Take beaten yoghurt , boiled rice , chopped cucumber and salt in a bowl.Toss well and set aside.
Heat clarified butter in a pan , add Bengal gram , cumin seeds , curry leaves , stir and add red chilly powder.Cook for 1 minute on low heat.
Add this tempering to the rice yoghurt mixture. Toss well with a spoon .
Serve chilled.You may serve it as salad.

Note: You can use leftover rice for this recipe.
Use fresh yoghurt or curd for delicious result.
You can add chopped carrots to enhance its flavor twice.
