Tomato Rice

Easy and tasty tomato rice recipe using leftover rice. This is a quick and filling one-pot meal that can be prepared by anyone, even beginners.

Tomato Rice

Tomato rice is a popular south indian lunch box dish, easy to prepare and taste just amazing. Normally it can be made with raw uncooked rice but in today’s recipe I have made it with leftover cooked rice.

This is a time saving and very quick recipe to make when you are feeling lazy and do not want to cook elaborate meals.

Basic Ingredients:

  • Cooked rice-Leftover or freshly cooked rice.
  • Tomatoes-Three to four medium size tomatoes.
  • Onion and garlic- Adds a very nice flavor in the dish.
  • Whole spices- To make the rice more flavorful.

How to cook tomato rice?

The process starts with spluttering the cumin and mustard in oil. Then saute the whole spices, onion, and garlic until you get a nice smell from them. Finally, add the spices and tomatoes, now let the tomato cook until soft and oil comes out from them.

The last part is to add the cooked rice and mix well. Garnish with coriander leaves and your tomato rice are done.

Serving Suggestions:

Serve the tomato rice with raita or as it is.

Equipment

  • Pan

Ingredients
  

  • 4 cups cooked rice
  • 1 onion
  • 4 garlic cloves
  • 4 to matoes chopped
  • 2 green Achilles chopped
  • 1 teaspoon cumin seeds
  • teaspoon mustard seeds
  • 4 tablespoon oil
  • 2 bay leaves
  • 2 cloves
  • 1 black cardamom
  • Few curry leaves
  • 2 whole dried red chilly
  • Spices:
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • 1 teaspoon red chilly powder
  • salt to taste

Instructions
 

  • Heat oil in a pan, add asafetida, cumin seeds, and mustard seeds.
  • Let the seeds splutter. Now add whole red chilli, bay leave, cloves and black cardamom. Stir and add minced garlic, saute and add onions.
  • Cook until onions are soft. Now add red chili, salt and garam masala.
  • Stir and add chopped tomatoes and green chili. Cook until onions are soft.
  • Add the cooked rice and mix well to combine everything.
  • Add chopped coriander leaves and serve.
