- Coconut oil: As we are making vegan cookies, I used coconut oil but you can use butter instead.
- Brown sugar: Adds very rich flavors and taste to the cookies.
- Molasses: To give that strong flavor and texture to the cookies.
- Vanilla extract: For flavorings.
- Almond milk: To bing the cookie dough.

How to make Vgean Gingerbread Cookies
Step 1. Make Dough– In a mixing bowl add flour, spices, salt, and baking soda. Mix well and set aside. In another mixing bowl, cream together coconut oil and sugar until light and fluffy.
Add in molasses, vanilla, and almond milk. Mix well. Now add the flour mixture in batches. Knead a dough. Divide the dough into two discs and cling wrap them. Chill the dough discs for about 2-3 hours or overnight.
Step 2. Shape and Bake– Once chilled, take the dough discs on a floured board. Use a flour-dusted rolling pin and roll a 1/8″ sheet.
Cut gingerbread cookies using cookie butter. Arrange them on a parchment paper-lined baking tray. Bake in a preheated oven for bout 8-10 minutes or until done.
Cool the cookies completely before icing.
Step 3. Decorate– In a mixing bowl add icing sugar and cream of tartar. Now add water, one tablespoon at a time, and make a smooth paste.
Transfer the paste into a piping bag. Decorate the cookies as per your preferences.
Serving Suggestions
Serve the cookies with a glass of milk, tea, coffee, or as it is. For Christmas parties, serve the cookies with a Christmas punch or your favorite Christmas drink.

- 1/2 cups all-purpose flour + extra for dusting
- 1/2 teaspoon baking soda
