Cuban Mojo Sauce


As I told earlier that I will be presenting different type of sauces throughout the week ,so for the second day I made the Cuban Mojo Sauce.

The mojo sauce is popular in Cuba and throughout the Caribbean island.In Cuban cooking,mojo means any sauce made with garlic, olive oil and a citrus fruit preferably sour orange.It is commonly used to marinate pork, chicken roast or to toss with tacos , fried cassava ,or a as dressing for Cuban black bean salad.


I made the black bean salad and used this sauce for dressing .It gave a wonderful ,tangy taste to the salad.The best thing about this sauce is it can be refrigerated for a week .

Ingredients:
1 cup sour orange juice
3-4 garlic cloves,grated
4 tablespoon olive oil,extra virgin
2 teaspoon lime juice
1 teaspoon cumin,ground
1 teaspoon oregano,chopped/dried
1/2 teaspoon kosher salt
Peppercorn to taste,crushed

Method:
In a mixing bowl ,combine all the ingredients.Stir and whisk well.
Refrigerate and use as required.

Enjoy!!

Serve- 8 servings    Cooking time-6 minutes
