As I told earlier that I will be presenting different type of sauces throughout the week ,so for the second day I made the Cuban Mojo Sauce.
The mojo sauce is popular in Cuba and throughout the Caribbean island. In Cuban cooking, mojo means any sauce made with garlic, olive oil and a citrus fruit preferably sour orange. It is commonly used to marinate pork, chicken roast or to toss with tacos , fried cassava ,or a as dressing for Cuban black bean salad.
I made the black bean salad and used this sauce for dressing .It gave a wonderful ,tangy taste to the salad. The best thing about this sauce is it can be refrigerated for a week .
