A crunchy and healthy coconut chia granola filled with the goodness of coconut and health benefits of chia and some other protein packed seeds and nuts.
This coconut granola is filled with all the healthy ingredients that would make it a wonderful and super delicious breakfast dish. I followed the recipe from a cookbook Lucy Bees’s Coconut oil and tweaked it a little as per our taste preferences.
Actually, the recipe used only two or three nuts and seeds but I used all the nuts and seeds that were in my pantry. That’s what made this granola more nutty and healthy too.
Since I tried this granola this is the third batch I made and it has become a family favorite.My husband loved it to the core and is having it for breakfast almost every weekday and don’t even complain about the boring oats anymore.

Dish– Coconut Chia Granola
Protein Source– Oats, chia, almonds, pecans, walnuts, hazelnuts, pumpkin, sunflower seeds
Coconut Granola
Ingredients
- 2 cups rolled oats
- 1/4 cup chia seeds
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1/4 cup walnuts
- 1/4 cup pecans
- 1/4 cup hazelnuts
- 1/4 cup almonds
- 1/4 cup raisins
- 1/4 cup sultanas
- 1 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1/2 cup coconut oil, melted
Instructions
- Preheat oven to 150 °C and line a baking tray with parchment paper.
- In a mixing bowl add all the ingredients and melted coconut oil. Stir with a spatula.
- Transfer the mixture into the prepared baking tray and spread it in an even layer.
- Bake in oven for about 40 to 50 minutes, stirring in between few times.
- Remove from oven and cool it completely before storing in the air tight container.

Granola is a favorite but it’s been really long since I made some at home. I love to munch on it as a snack than a breakfast actually :-). Love your take on the dish and the best part is it can be modified to suit our tastes and pantry supplies!
