Classic Hummus

Hummus is a classic middle eastern dip made with chickpeas and tahini along with loads of garlic and spices. This hummus is super easy to make and tastes just WOW with pita chips.

What is Hummus ?

Hummus is a dip from the Middle Eastern cuisine, mainly served with Pita bread or chips. I love making it from scratch using my own homemade tahini paste recipe.

Hummus is the most famous dip which is temptingly delicious and full of nutrients as well.
Its is so refreshing and flavourful that once you try homemade hummus, you will never go back to the store bought ones.

Ingredients Needed to make Hummus

  • Chickpeas: Dried chickpeas work wonders in this recipe but if you’re in a hurry you can use canned chickpeas as well.
  • Tahini: Tahini gives a moist nutty and creamy texture to the hummus. When I run out of tahini I use roasted sesame seeds instead.
  • Garlic: For that intense pungent flavor, garlic is a must.
  • Lemon juice: To add some tanginess as well to balance the taste.
  • Extra virgin Olive oil: Olive oil adds a nice velvety texture and delicious flavors in the hummus.
  • Salt: As per your taste.

How to make Hummus from Scratch?

First of all, wash and soak dried chickpeas in enough water, a night before you are going to make the hummus. Next day cook the chickpeas in pressure cooker/ instant pot or saucepan until they are soft.

Now add all of the ingredients for hummus into a food processor or blender and blitz to make a smooth textured puree.

Keep the hummus refrigerated and serve with pita chips.

Pro Tips

  • To save time, add a pinch of baking soda while cooking the chickpeas. It will make chickpeas cook faster and soft.
  • Add olive oil while pulsing the hummus as per desired consistency.
  • For best results make the fresh hummus, when you are ready to serve.
  • For variations, you can add some chia seeds, sesame seeds or pomegranate pearls as topping over hummus.
  • Use extra virgin olive oil for best results.

Can we freeze hummus?

Yes absolutely, you could freeze hummus for upto 3 months. Make sure to freeze them in air tight freezer safe containers.

To avoid moisture, add a layer of olive oil on top of the freezer safe box. Do not over fill the freezer box as the hummus might expand after freezing.

When you are ready to eat, thaw it a night before in the refrigerator and stir it properly to mix the oil and flavors.

Serving Suggestions

Serve the hummus with pita chips, carrot and celery sticks, and or falafel. If you have some leftover hummus, make this lip-smacking delicious falafel pita salad bowl.

Expand the limits of hummus beyond pita or chips, make a dip out of it, spread it on your sandwich, or smear it on your meat. Experiment and use hummus as you like.

Equipment

  • Food Processor/Blender

Ingredients
  

  • 1 cup white chickpeas/garbanzo beans
  • 1/2 cup homemade tahini paste
  • 3-4 garlic cloves
  • 1 teaspoon cumin seeds
  • 4 tablespoon olive oil
  • few parsley leaves
  • 2 tablespoon lemon juice
  • salt to taste
  • 1/2 teaspoon paprika optional

Instructions
 

  • Wash and soak chickpea in water overnight. Drain and let them cook in a pressure cooker for 3-4 whistles or if using a pan, cook up to an hour or until chickpeas are soft.
  • Drain the water and let the chickpeas cool.
  • In a food processor pulse the chickpeas until smooth. Add tahini paste, parsley, lemon juice, olive oil, cumin seeds, and salt. Process until smooth paste forms.
  • Transfer in serving bowl and drizzle with some more olive oil and sprinkle paprika.
  • Serve with pita bread, crackers, or roasted vegetables.

Notes

  1.  You can also replace dried chickpeas with drained and rinsed canned chickpeas. It definitely saves time.
  2. Adjust the lemon juice and paprika as per your taste.
  3. Use of parsley is optional, you can also use cilantro instead.
  4. To give it an extra kick add some crushed peppercorns.
