Hummus is the classic middle eastern dip made with chickpeas and tahini along with loads of garlic and few spices. This hummus is super easy to make and tastes just WOW with pita chips.
Wash and soak chickpea in water overnight. Drain and let them cook in a pressure cooker for 3-4 whistles or if using a pan, cook up to an hour or until chickpeas are soft.
Drain the water and let the chickpeas cool.
In a food processor pulse the chickpeas until smooth. Add tahini paste, parsley, lemon juice, olive oil, cumin seeds, and salt. Process until smooth paste forms.
Transfer in serving bowl and drizzle with some more olive oil and sprinkle paprika.
Serve with pita bread, crackers, or roasted vegetables.
Notes
You can also replace dried chickpeas with drained and rinsed canned chickpeas. It definitely saves time.
Adjust the lemon juice and paprika as per your taste.
Use of parsley is optional, you can also use cilantro instead.
To give it an extra kick add some crushed peppercorns.
