Chocolate Shakkarpare /Chocolate Diamond Cuts

Chocolate Shakkar Pare , the recipe came from the cookbook with 150 party recipes that I had recently bought . Shakkar Pare are traditional Indian Sweet diamond cuts that are normally prepared in festivals , marriages and any other occasion to celebrate. This chocolate version is a twist to the classic delicacy and tasted amazing as well . My daughter and her friends loved it . This is my entry for the 4th week of December Month’s CCChallenge . So let’s start the recipe . Yum

Ingredients:
200 gm sugar
300 gm all purpose flour
50 gm cocoa powder
100 gm semolina /rava/suzi
100 gm clarified butter , melted
1 cup water
Oil for deep frying

Method:
Take sugar and water in a sauce pan and boil till sugar melts . Set aside.
Sift all purpose flour , semolina and cocoa powder in a bowl . Stir and add melted butter .
Now add sugar syrup and knead a dough . Make 5-6 round balls from dough . Take one ball and roll it over a flat surface with rolling pin. Cut in diamond shape or any desired shape with the help of knife.
Heat oil in a wok or pan and deep fry the diamond cuts in batches till nice and crisp. Repeat the same procedure with rest of dough.
Drain on paper towel , cool and store in air tight container.

Serve these chocolate diamond cuts in parties , or enjoy as an evening snack.

Serve- around 400 gms of diamond cuts. Cooking time-45 minutes.

Note:
Fry the diamond cuts for 2 minutes on high heat and then adjust the heat on low to medium.
Don’t over fry or else cocoa powder will get burnt.
These cuts may stay fresh for upto 1 month if stored in air tight container. I have added a little less sugar as mentioned in the recipe as I prefer less sweet , you may Adjust sugar as per taste .
