This is one simple and effortless curry that you can make anytime. Capsicum is rich in antioxidants and is very easy to cook. There are many ways to cook capsicum but I like it cooking this way always with potatoes.It is best paired with roti or rice. Make a plain raita and there your perfect lunch is ready.

Ingredients
  

  • 3 green capsicum seeds removed and cut into cubes
  • 2 potatoes cubed
  • 1 teaspoon ginger grated
  • 2 green chilly chopped
  • 2 garlic cloves minced(optional)
  • 2 to matoes chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon paprika
  • Salt to taste
  • 3 tablespoon olive oil
  • Any oil- for frying

  • Heat oil in a pan and deep fry potato cubes till golden colour appears.Drain and keep aside.
  • Heat olive oil in a pan add cumin seeds, as popping start add garlic and sauté for 5 minutes.Now add ginger, salt and all spices, stir and add tomato and green chilly.
  • Add capsicum cubes to this and cook till it becomes slightly tender.
  • Now add fried potatoes and mix well.Cook for 2 minutes.
  • Garnish with garam masala, coriander

Notes

Adjust spices as per your taste.
