Burnt Garlic & Tomato Crostini

Crostini is a toasted slice of French bread topped with a variety of different toppings and lots of olive oil.


I made it with the ingredients available in my kitchen.But I can tell you one thing that the outcome was wonderful. We all loved the garlic flavored tomato crostini.

This is my final post for BM#55 under French recipes theme.So let’s start the recipe.yum

Ingredients:
4 tablespoon extra virgin olive oil
4 garlic cloves,minced
2 red plum tomatoes,chopped
1 teaspoon white wine vinegar
1 teaspoon sugar
1 teaspoon thyme
Kosher salt to taste
Peppercorn to taste
Few parsley leaves,chopped
8 slices Baguette cut diagonally into 1/4 inch

Method:
In a mixing bowl add chopped tomatoes , vinegar ,sugar ,thyme and parsley .Mix well.Season with salt and pepper.
Heat 2 tablespoon olive oil in a pan and add garlic.Stir and cook until a little burnt or brown in color.
Remove garlic from oil and add another 2 tablespoon of oil in the pan.
Arrange slices of bread on the pan and toast them till nice golden and crispy.
Top the toasted bread with the tomato garlic mixture.
Serve immediately.

Serve-4 Cooking time-20 minutes

Notes:
You may add up some ricotta cheese for extra flavor.
