Bengali Aloo Dum

Bengali Aloo Dum is a rich,spicy and scrumptious potato curry that are cooked in tomato onion gravy and then simmered to get the perfect blend of spices and aromatics.


As a kid,I had this habit of collecting recipes from newspaper and magazines.This recipe was the first that I started collecting and I tried making on my own.I remember I was in 6th grade and we had some guests coming over.I insisted my mom that I will make one curry.First she refused but later on she agreed.When we served the guests this curry they said Bengali aloo dum is really dumdaar.

The recipe of Dum Aloo seems lengthy but it really is very easy and tastes awesome.Go ahead and gather your ingredients and impress your guests.

Ingredients:
1/2 kg potatoes,small sized
2 tomatoes,pureed
2 onions,paste
2-3 garlic cloves,paste
1 teaspoon ginger,grated
3-4 green chillies,paste

Spices:
2 bay leaves
2 black cardamoms
2 cinnamon sticks
2-3 cloves
2-3 pepper corn
2-3 whole dried red chilly
1 teaspoon cumin seeds
1 teaspoon mustard seeds
a pinch asafetida
1 teaspoon turmeric powder
1 teaspoon red chilly powder
1/2 teaspoon garam masala powder
1 tablespoon sugar
salt to taste
few coriander leaves,chopped
2 tablespoon ghee/clarified butter
1/2 cup yogurt
Water as required
oil for deep frying

Method:
Boil potatoes,peel and sprinkle turmeric powder ,leave for 2 minutes.
Cut them in halves or use as such .Fry these potatoes in oil until golden color appears,keep aside.
Now add ghee in a large skillet or pan and add asafetida,bay leaves,dry red chillies,cumin seeds,mustard seeds.Stir and add cardamom,cinnamon,peepers and cloves.As the color of whole spices changes add paste of garlic,ginger and onions sauté for 5 minutes.
Now add all powdered spices except garam masala and add tomatoes paste , green chilly paste , stir continuously until oil comes out from the edges.Add yogurt and sugar and 2 cups of water
As the water start boiling add the fried potatoes ,cook for another 20-25 minutes on simmer.
Garnish with chopped coriander leaves,garam masala powder and ghee.
Serve hot with roti or rice.
