Amaranth Leaves Stir Fry
A healthy and tasty stir fry made with amaranth leaves and spices.
Ingredients
- 250 gm / 2 Cup Amaranth Leaves chopped
- 1 medium Onion chopped
- 2 Green Chilli chopped
- 5-6 Garlic cloves
- 1/2 teaspoon Turmeric powder
- 1 teaspoon red chilly powder
- 1 teaspoon amchur powder/dried mango powder
- salt to taste
- 2 tablespoon vegetable oil/clarified butter
To temper:
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 teaspoon chana dal/split Bengal gram
- 1 teaspoon urad dal/split black gram
- 4-5 curry leaves chopped
Instructions
- Heat a non-stick pan and add oil. Once the oil is hot add the ingredients under "To temper".
- Add chopped onions and garlic and green chilly. Saute for 2 minutes.
- Add chopped amaranth leaves, turmeric powder, red chilly powder, amchur powder and salt. Mix it well. Cook for 5-7 minutes and remove from heat.
- Serve hot with Plain Rice, Chapati or Paratha.
