Puff Patties

Puff patties are very popurla snack in India , normally sold by the name of aloo puff patties or paneer puff patties. Go to any local tea shop or school/college canteen you will definitely find these savoury puff patties.

When stuffed with any of the various fillings, be it paneer, aloo or mixed veg or any non veg stuffing, they make a very filling and delicious tea time snack.

Ingredients Needed to make Aloo Puff

  • Potatoes: Medium-sized potatoes boiled and mashed.
  • Peas: Fresh or frozen green peas.
  • Onion and ginger: Adds a nice flavor and texture to the filling.
  • Spices and salt: Minimal spices like turmeric, red chilli, coriander, and garam masala along with salt
  • Oil: To make the filling and brush the puff sheets, it can be replaced with ghee or butter.
  • Coriander leaves: Adds nice refreshing flavors to the filling.

Hoe to make Aloo Puff?

Step 1. Make stuffing- Mash the potatoes with a potato masher and keep them aside. Heat oil in a pan, add cumin seeds, ginger, and onions. Sauté for a minute and then add green peas and all of the spices and salt.

Add mashed potatoes, stir and cook for 5-6 minutes. Add coriander leaves and remove from heat and set aside.

Step 2. Shape Patties– Thaw and prepare puff pastry sheets as per packet instructions. Cut the sheets into square pieces, brush with oil, and fill a heaped tablespoon of filling in the center.

Apply some more oil or water in the corners and cover from all sides. Repeat the same procedure with the rest of the puff sheets squares. Press the side with a fork to ensure cover.

Brush with oil from the top and arrange on a baking sheet covered with aluminum foil.

Step 3. Bake- Bake in preheated oven for 20-25 minutes at 180 degrees or till brown and crisp from the top.

Serving suggestions

Serve the aloo puff patties with green mint chutney, tamarind chutney and or with a cup of tea. I love serving these puff paties with ketchup as well. They taste just amazing as it is too.

Pro Tips

  • Make sure to thaw the pastry sheet if using frozen pastry sheets.
  • Let the filling cool completely before stuffing it into the pastry.
  • You can make them in any shape like triangle, square or rectangle.
  • Make sure to seal the edges completely to ensure it won’t open while baking.
  • Brush the patties with ghee for more delicious flavors.
  • Preheat the oven beforehand.

  1. I love puff pastry sheets. These are versatile and can make n number of recipes. I make puff pastries a lot. I seal the pastry with little water and never tried with oil. This a nice evening snack.
