Yemeni cuisine is entirely different from midddle eastern cuisine and is well known for it’s Mughlai style Indian influence.It is mostly popular in Arab states of Gulf.I made the simple meal from the country . Every dish of the country tasted like ours food. A very few spices were used and the flavor was still enhanced in the dishes.So let’s start the recipe.yum

Dish- Dabeekh , Khobz Al Tawa &Zhoug

For Dabeekh
Ingredients:
1 potato , cubed
3-4 lady finger, cut in pieces
2 garlic cloves, minced
1 onion, chopped
2 green chilli,chopped
2 tomatoes,chopped
1 teaspoon. coriander powder
1 teaspoon cumin seeds
1/ tablespoon oil
salt to taste
black pepper to taste
1 cup water
Method:
Heat oil in a pan and add onion and garlic,saute till browned, stirring frequently.
Add cumin seeds , coriander powder , salt and pepper. Stir and add tomatoes , cook till oil come sout from sides of pan.
Add okra, potatoes, and water and cook till potatoes are done and water is evaporated.
Remove from heat and serve hot with rice or Khobz al tawa.
For Khobz Al Tawa
Ingredients:
4 cup bread flour
1 1/2 cups water
1 teaspoon salt
1/2 cup butter, melted
Method:
Knead a smooth dough adding salt and water. let it rest for 20 minutes.Make 4 balls from the dough .
Take on ball on the rolling board and roll it as thion as you can. You may roll it thin by tossing over the board.
Apply melted butter all over the thin rolled sheet. Fold it side by side applying butter on each side.
Once you made the square , let it rest for 5 minutes more and then roll it a little bit more.
Heat a Tawa and apply some butter over it. Transfer the rolled square over it and let it cook for 5 minutes.Flip the side and cook again.
Serve hot with any side dish or tea.
For Zhoug
Ingredients:
1 tomato
1 garlic clove, minced
2 green chilli
1 teaspoon cumin seeds
Salt to taste
Method:
Grind all ingredients together and store in refrigerator. Use as required.
Original recipe uses pestle and mortar , but i don’t have pestle so i used the blender.

From what most of our bm group has done for Yemen, yes the food looks a lot like our Indian food. You put togehter a nice meal for Yemen.
The bread is so well made and the other dishes look great too. Very nice meal.

Yemeni is one of my faves as theres a nearby restaurant I frequent. It's so interesting that the foods from eastern europe (Uzbekistan, etc.) all the way to India have similarities because of Persian/Mughlai empire that was so large. Iranian derived food is everywhere.
