Xinjiang Uyghur Veg Polo/Pilaf

For the letter X can cook from city or State rather than any country as of now there is no country name with this letter. So I choose Xinjiang that is an autonomous region in the northwest of People’s Republic of China.
Xinjiang cuisine reflects the cooking style of ethnic groups and normally called as Uyghur cuisine.Main ingredients include kebabs, mutton , roasted fish and rice.

Polo or pilaf is main dish commonly cooked with rice , mutton, carrots and steamed in water . Raisins and apricopts may also be added.I have prepared it with vegetables . So let’s start the recipe,yum

Ingredients:
2 cup rice
1/2 cup oil
1 large onion, chopped
1 spring onion , chopped
2 cloves ,garlic chopped
1 teaspoon ginger, chopped
1 cup mixed veggies( peas ,bell peppers, beans , sweetcorn , celery, carrots )
1 red Chilli , chopped
1/2 teaspoon cumin
Salt to taste
Pepper to taste
Few raisins (i didn’t use)

Method:
Heat oil in a pan , add onions and spring onions.Stir for two minutes.
Add ginger and garlic , stir and add the veggies.
Now add washed and drained rice , salt and pepper.Mix well.
Add water and stir continuously till water get evaporated .Cook covered for another 10 minutes.

Remove from heat  add raisins if using and serve warm with yoghurt , flatbread and salad.

  1. I learned about these ethnic people few months ago watching documentary. so surprised to see Chinese people speaking Arabic and now the cuisine is so much like Middle Eastern – looks delicious
