Chaulai ke Ladoo is sweet popped amaranth seeds balls made using jaggery and are very healthy and tasty sweet treat plus super easy to make.
What are Amaranth seeds?
Amaranth seeds aka chaulai are protein-packed, calcium-rich and high fiber grains so versatile to use in any form. So being a super grain I love using the amaranth seeds in my kitchen.
So one of my favorite dish that I love making with amaranth is this ladoo, it is super easy to make if you get passed through the popping part.
When we were kids my mom used to make this ladoo for most of the festivals like Ganesh Chaturthi, Rakhi or Sankranti and we would devour as many as we could on the same day.
Basic Ingredients for Ladoo:
There are only two basic ingredients to make chaulai ke ladoo are listed below.
- Firstly, Amaranth seeds-The first and the main ingredient is, of course, amaranth seeds.
- Sweetener-Sugar or jaggery any one of it would do.
How to make chaulai ladoo?
The process of making chaulai ke ladoo is very simple, you just need to pop the amaranth seeds and that’s it. After that just cook the jaggery to the right consistency and add the popped amaranth seeds.
Use water to wet your palms and make the ladoo while the mixture is still warm.
Serving Suggestions:
There is nothing you need to serve the ladoos with but if you would like to try them with warm milk or in fact tea.

Chaulai Ke Ladoo
Ingredients
- 1 cup amaranth seeds
- 1 cup jaggery
- 1 tablespoon water
Instructions
- Heat a heavy bottom wok or pan on medium high heat. Add half a teaspoon of amaranth seeds in it and stir until they start popping.
- Once the half teaspoon seeds popped, remove from wok and start adding a tablespoon amaranth seeds at a time and let the pop while continuously stirring.
- If the first trial batch doesn't pop wait until you get the right heated temperature of the wok and do not add more. Keep trying adding only a tiny amount of seeds until the pan is heated enough.
- Likewise, pop all the amaranth and place in a big mixing bowl.
- Sieve the seeds using a strainer to remove the unpopped ones.
- Meanwhile into the same wok add chopped jaggery and a tablespoon water. Let it melt and make a one stirring consistency syrup.
- Add the jaggery syrup into the sieved amaranth seeds and mix well.
- Wet your palms and start making round balls, keep applying water on your palms before start making each ladoo.
- Store in airtight container and enjoy.

I grew up eating these laddus. mummy used to make with jaggery and the whole family had this in breakfast, dipping in milk. Loved it.
OMG..bachpan yaad aa gaya, 10 paise ka bada ladoo, almost every other day I used to buy from a lady who used to sit outside our school. I made a few months back at home before I took pics all vanished 🙂 Yours look so similar to mine, may as well you send me a dabba full of these yummy ladoo 🙂
