One Pot Fusilli Pasta with Vegetables-A healthy and tasty pasta cooked with a lot of vegetables and herbs is just perfect to enjoy on the busy weekdays as a filling and satisfying meal.
Pasta is my girl’s favorite meal and they can have it anytime without complaints. So whenever I ran out of options I make this easy peasy one pot pasta with vegetables. I don’t normally add any sauce as the vegetables and tomatoes make it quite delicious without any.
I made this pasta for our lunch and it was quite hot when I was taking pics. Moreover, the girls were super hungry so I had to take the pics in a jiffy. Will try to replace them when I make it again.

One Pot Pasta
Ingredients
- 300 gm whole wheat fusilli
- 3 tomatoes, chopped
- 1/2 cup peas
- 2 cups baby spinach leaves
- 1 zuchinni, chopped
- 1/4 cup sweetcorn
- 1 carrot, chopped
- 1 onion, chopped
- 3-4 garlic cloves, minced
- 2 tablespoon basil leaves, chopped
- salt to taste
- peppercorn to taste
- 2 tablespoon olive oil, extra virgin
Instructions
- In a medium-size saucepan add all the ingredients along with 4 cups of water.
- Cook covered for 20 minutes. Remove from heat, serve and enjoy.

Very unique instructions. Do you put all vegetables and pasta along with the oil in water until the water is absorbed?
Yes Varada, all ingredients together until pasta is cooked.
This is a fantastic one pot meal. Even I had a pasta in mind when I was planning for this theme. Couldn’t make it..your pictures surely is making me want to try it.
I sometimes love having a good pasta full of veggies and herbs without any sauce but hubby insists on some sauce. Love this easy dish.
Wow! Never tried cooking pasta covered. Sounds like a very easy recipe.
After reading a lot of one pot pasta recipes, I tried one recently and loved it so much. Cooking everything in a single pot makes the job easier. This one looks so delicious with all the veggies included in it.
Havent tried pasta this way, though its quite common here. Have to give a try to this one pot version soon. Well done Sapana.
Can’t believe that such a nice and delicious looking pasta could be made so easily by just putting all the ingredients together and cooking.
I am yet to make pasta as a one pot meal. I have seen several recipes, but not yet tried it. This looks so perfect!
