Tawa Rice

Tawa rice is one of the popular street food rice dish cooked with vegetables and pav bhaji masala.

What is Tawa Rice?

If you have ever been to Mumbai or not, you must be knowing that after Pav bhaji and Vada pav, Tawa rice is the popular street food in Mumbai.

Tawa rice is basically rice cooked with leftover pav bhaji on the same Tawa with added spices, butter, and rice. It’s one of the favorite lunch dishes for the local office people.

Basic Ingredients for Tawa rice:

The basic ingredients for Tawa rice are listed below.

  • Firstly, Rice- Any kind of pre-cooked rice are perfect for the recipe. I, most of the time use last night leftovers boiled rice.
  • Vegetables- Preferably, all the vegetables that go in the bhaji of pav bhaji (carrots, bell peppers, potato, green beans, etc.), are used in Tawa rice. But as always use vegetables as per your own choices.
  • Butter- The whole dish turns out absolutely scrumptious because of the butter only. Yep, that’s true! So do whatever but do not omit butter in the recipe.
  • Pav bhaji masala- The street food makers don’t usually add the bhaji masala as they make the dish on the same Tawa which is coated with pav bhaji, but do add it to get those flavors.
  • Onion, garlic, and Kashmiri red chilli-The caramelized onions in butter, the Kashmiri chilli and garlic paste brings out extra taste and flavors in the dish. (See Notes)
  • Salt and other Spices- Basically other than salt, we only need turmeric, and red chilli powder, that’s all.
  • Lemon juice and Coriander leaves-Can’t do without these two main things to ooze out the tanginess and freshness together.

Serving Suggestions:

Basically, Tawa rice can be relished as such but if you prefer, serve it with bhaji of pav bhaji or simple yogurt raita will do.

Ingredients
  

  • 4 cups Boiled rice
  • 2 onion finely chopped
  • 1 teaspoon ginger grated
  • 4-5 cloves garlic grated
  • 3 tomatoes chopped
  • 4 green chilies chopped
  • 1/2 cup green peas
  • 1 carrot diced
  • 1/2 cup green beans chopped
  • 1 capsicum chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 2 tablespoon pav bhaji masala
  • 1 teaspoon red chili powder
  • salt to taste
  • 1/4 cup fresh coriander leaves chopped
  • 2 tablespoon lemon juice
  • 1/2 cup butter + 1 tablespoon vegetable oil
  • water as required

Instructions
 

  • Heat butter and oil in wide pan or wok or large skillet. Add cumin seeds and cook for 1 minute.
  • Add grated ginger, garlic and chopped onion, green chilies and sauté till lightly browned.
  • Add chopped vegetables, salt, and tomatoes.
  • Add 1/2 cup of water and cook on low to medium heat till veggies are slightly tender. Frequent stirring is required.
  • Add turmeric powder, pav bhaji masala, and red chili powder. Mix and cook for two to three minutes.
  • Add the rice and give a nice stir. Add coriander leaves and lemon juice and mix well. Cook on high heat for a couple of minutes.
  • Remove from heat and serve warm garnished with coriander leaves

Notes

  1. You can use your choice of vegetables like cabbage, green beans, peppers etc.
  2. Recently, I started making the recipe from Ranveer Brar’s, and it’s turning out even more delicious.
  3. For that, you just add a paste of garli and red chillis in the recipe.
  4. Adjust the spices as per your taste.
