Sukhe Aloo Palak-Potatoes and spinach cooked together in dry curry along with garlic ginger and mild spices. A very simple dry saute which tastes really comforting with hot chapatis.

This is my second favorite aloo palak curry after the gravy Aloo Palak version and I usually make it with roti on those days when I want to eat dry curries only. We have this routine habit of making dry curries for lunchtime time and gravy or dals for dinners.

So I prefer this kind of simple and easy curries to make for lunchboxes and all. It just takes few minutes to make and as potatoes are everyone’s favorite so it’s a win-win for everybody.

Ingredients
  

  • 4 potatoes, cut in small cubes
  • 500 gm spinach leaves, chopped
  • 2-3 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 2 green chilli, chopped
  • 2 tomatoes, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon garam masala
  • salt to taste
  • 2 tablespoon oil

Instructions
 

  • Heat oil in a pan and cumin seeds, garlic, and ginger. Saute for a minute until garlic is slightly golden in color.
  • Now add the potatoes and cover the lid of the pan, keep the flame low.
  • Cook for 5-7 minutes, stir in between. Open the lid and add tomatoes, green chilli, turmeric powder, coriander powder, and salt. Stir and add spinach leaves.
  • Cook for few minutes until tomatoes are soft and all the moisture is evaporated.
  • Add garam masala and mix well. Remove from heat and serve with roti.

Notes

Adjust the spices as per your taste.

  1. this looks so inviting! we usually make this with methi! but very difficult to get it in malaysia……….This recipe will be made soon……..will let u know when i try it:)

  2. I generally make aloo methi similarly but never tried aloo palak! Have always made gravies with palak, never a sookha sabji…
    Bookmarked to try this Sapana 🙂 and I loved the vibrant colour
