I saw this recipe on “Gordon Ramsey’s Ultimate cookery Course” on TLC. I tried it on the same day. This recipe is surely a keeper and would be loved by all. For the last day of BM #33 “Recipe of favorite celebrity chef” this is my entry. So let’s start the recipe . yum
1 teaspoon Cumin seeds
2 teaspoon Coriander powder
1 teaspoon Mustard seeds
2 teaspoon Curry leaves
Salt to taste
5-6 dry Red Chilli
1 cup Grated onion
2 tablespoon Olive oil
3-4 Garlic cloves , grated
3 tablespoon sugar
3 tablespoon Tamarind
4 tablespoon Coconut dessicated
1 cup Carrot , grated
1 1/2 cup Water
Method:
Heat a pan and dry roast cumin , coriander , mustard , curry leaves, and dry red Chilli . Cool and grind to make a coarse powder.
Heat olive oil in a pan , add garlic and onion . Sauté and add tamarind and sugar. Mix well.
Add carrot and dessicated coconut. Add the powder made and mix well. Add water and cook till carrots are done and the mixture thickens. Remove from heat , cool and transfer in air tight container.
Store in refrigerator.
Serve -4. Cooking time -25 minutes

I rarely make chutney with carrot as my folks find it a little sweet. This one has to be tried!

Ironic we are learning a chutney recipe from a foreigner :))..But then that's exploring a new taste and a new way of looking at old recipes :)..Great one Sapana!
