Snake gourd /Chichinda Dry Curry

Snake gourd or known as Chinese cucumber plays an important role in the category of healthy vegetables. This vegetable contains enormous amount of water , protein , fibers , minerals and vitamins. 

I have never introduced this healthy veggie in my kitchen till I didn’t know its health benefits . I had learned this recipe from a fellow blogger , tried it and the result was a success in my family. So let’s start the recipe . Yum

Snake gourd curry





Ingredients

250 gm or 2 Snake gourd / Chichinda
1 teaspoon Mustard Seeds
1 teaspoon Chana Dal/Split Bengal gram
2 whole dry Red Chilies
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon dried mango powder/ amchoor powder
1 medium Onion , chopped
3-4 Curry leaves
4 tablespoon Gram Flour/Besan
4 tablespoon vegetable oil
Salt to taste
Method:
In a small wok , dry roast the besan until light brown. Keep aside .

Wash snake gourd and scrape the outer skin with a knife. Cut lengthwise into half and scoop out seeds and white portion. Chop it into small pieces.

Heat oil in a pan and put mustard seeds.. Saute for 1 minute and add chana dal, curry leaves, red chilies, onion in the same order and cook till golden in color.
Add chopped snake gourd , salt, red chili powder, turmeric powder; stir to mix well. Cook covered on low medium heat until tender.
Add the roasted besan and amchoor powder; stir-fry for 2-3 minutes till all ingredients are mixed.
Serve with Chapati and Dal.

Serve-3. Cooking time -25 minutes
