Pumpkin is most widely cultivated vegetable throughout the world and is a rich source of antioxidants , fiber , minerals and vitamins.Popularly known as SitaPhal in Hindi and considered to be cold by nature as the name suggest Sita – means cold and Phal means fruit .Its commonly used vegetable during fasting in North India.Today I am sharing a very simple recipe of Pumpkin Dry curry without garlic and onions , that is a perfect dish to accompanied with buckwheat flour puff bread /poori during Navratri’s. So let’s start the recipe.yum
Now add pumpkin cubes , season with salt , give a nice stir and cover the lid . Let it cook for 15 minutes on low heat or till pumpkin is tender. Frequently stirring is required.
Add all spices and mix well ,cook for 5 minutes . Remove from heat , add chopped coriander leaves.

For Puff Bread/Poori
Mix all ingredients in a bowl , with the help of water knead a smooth dough and set aside for 5 minutes.
Buckwheat Puff bread
Buckwheat dough
Heat oil in a wok , make 8 small balls from dough. Dust one ball with dry flour , roll it on rolling board ,like wise make all Poori.

Fry these breads/pooris in hot oil from both sides , two at a time, till golden and drain out on paper towel.

Serve hot poori with pumpkin curry.
Serve-2. . Cooking time -35-40 minutes
Note: Add water slowly in buckwheat , and if seems loose bind with dry flour .
