Achaari Mushroom & Peas Pulav

Rice preparation with different variation is heartily accepted by my family. This recipe came from a sample food book called Good Mood Food by Chef Komal Taneja , free with Hudson Canola Oil. I used her method of preparation and the result was good. Everyone in the house liked these mushroom and peas rice made in pickle spices.So let’s start the recipe.yum

Ingredients
1 1/2 cup Basmati Rice/ broken basmati
4 cups water
250 gm Button Mushroom, diced
1 cup peas
1 cup spring onion, sliced
1 cup red onion , sliced
4 green chillies , chopped
1 teaspoon fenugreek seeds/ methi dana
1/2 teaspoon Nigella seeds / kalonji
1 teaspoon fennel seeds/ saunf
1/2 teaspoon Carom seeds/ Aijwain
1 teaspoon cumin seeds / Jeera

Spices:


1 teaspoon red chilly powder
1 teaspoon chaat masala
1/2 teaspoon cumin powder
1 teaspoon biryani masala
1 teaspoon peppercorn , crushed
1/2 pinch red food coloring

Salt to taste
4 tablespoon canola/ vegetable oil

Method:
Wash and soak rice in 1 cup water for 20 minutes.
Heat oil in a cooker , add fennel seeds , nigella seeds , fenugreek seeds , carom seeds and cumin seeds. Sauté for 1/2 minute.

Add sliced onions and green chillies. Sauté for 2 minutes.

Add all spices , food coloring and salt , mix well.

Now add mushroom and peas. Sauté for 2-3 minutes.

Add soaked rice and 3 cups water. Cook for 1 whistle or if using pan bring to boil , cover the lid and cook on simmer till pulav is done.

Serve hot with chutney and boondi Raita.

Serve-4. Cooking time -30 minutes
Note : You may skip food coloring and add turmeric powder instead.
You may add corn instead of peas for variation.

  1. This is so unique but am admiring the flavors brought out by the ingredients. Never made anything
    like this lovely pulav. Sure on my waiting list because we love and eat loads of rice for almost
    every meal of the day.
