Suzi Halwa

Suzi halwa is a sweet semolina dish usually made to celebrate any auspicious occasion in India. Normally it is customary to make on the eighth or ninth day of Navratri.

What is Suzi halwa?

Suzi halwa is a sweet semolina dish usually made to celebrate any auspicious occasion in India. Normally it is customary to make on the eighth or ninth day of Navratri.

After fasting for eight days, the fast is opened by offering Prashad to nine girls often and that is called Kanya Pujan, thus also marks the importance of the feminine in the form of deity. The preparation is started early in the morning, after that a long wait for girls, because today is their day and their own importance in the ritual.   Yes, it is a very special day to get blessings from these little angels.

Basic Ingredients for Halwa:

The basic ingredients to make halwa are listed below.

  • Firstly, Semolina/Suzi-I prefers using coarse semolina to make the halwa. You may also use the fine variety of it if desired.
  • Ghee-Halwa tastes better in ghee only, I have never tried making in oil. But, I guess it is doable.
  • Sugar-Use sugar as per your taste preference.

How to make suzi halwa?

Making suzi halwa is really easy and takes very little time to make with few ingredients. The only thing to make sure is roasting the semolina on low heat until golden in color.

After that the next step is to boil sugar with water for 2-3 minutes, and add the sugar water in the roasted semolina. Now all you need to do is cook on slow until the water is absorbed.

Finally add chopped nuts and raisins and serve the halwa just warm.

Storage:

Store the halwa leftovers in refrigerator for upto a week, but I am telling you there won’t be any leftovers to store.

Ingredients
  

  • 1 1/2 cups semolina/suzi/rava
  • 1/2 cup sugar or as per taste
  • 4 cups water
  • 2 green cardamom, crushed
  • 1 tablespoon nuts,(almonds,cashew,raisins) chopped
  • 1 tablespoon coconut, desiccated, optional
  • 1/2 cup clarified butter

Instructions
 

  • Heat clarified butter in a wide, open mouthed work. Add semolina and keeping the heat low, roast it for 10-15 minutes till its colour changes from white to light brown.
  • Add chopped nuts and stir for 1 minute. Remember to keep low heat.
  • In another pan add 4 cups water and crushed cardamoms, boil it and add sugar, as the sugar melts turn off the stove.
  • Add this hot water to the roasted semolina, you can hear a splash and bubbling, just be careful.
  • Cook it till water absorbs in the semolina and ghee comes out from the edges.
  • Add desiccated coconut over the top. Serve hot with Chana and Poori.

Notes

  1. You may use oil instead of ghee.
  2. Make sure to stay a bit away while adding the water as it may splash.
  3. Store the leftovers in refrigerator.

    Sooji Or Suzi Halwa prepared as prasadam as opposed to just to serve as a meal, tastes way better. Its as though God has tasted it and added sweetness to it. I’ve not tried making sooji halwa with water as we use milk, will have to try out your recipe.
