Ingredients:
1 cup rice vermicelli
1 onion,chopped
2 green chillies,chopped
1 teaspoon ginger,grated
Few curry leves
1 teaspoon mustard seeds
1/2 teaspoon cumin seeds
1 teaspoon urad dal
1 teaspoon red chilly powder
A pinch asefetida
Salt to taste
1 tablespoon cashew nuts
1 tablespoon oil
Method:
Wash and soak rice vermicelli in enough water for 5-7 minutes.Drain and set aside.
Heat oil in a pan and add Asefetida ,cumin,mustard seeds.Stir and add urad dal and curry leaves. Sauté for a minute.
Now add ginger , green chilli and chopped onions .Fry the onions for few minutes.
Add salt and chilly powder and cashew nuts .Finally add rice vermicelli ,stir and cook for 10 minutes.
Remove from heat and serve warm.
Enjoy!!
Serve-2. Cooking time-20 minutes

This is such a common brunch in my house as well. I also add some vegetables to it and my son loves to take it to school for lunch. Looks so tempting Sapana!

I too make this rice vermicelli, but usually with lots of veggies!! A perfect filling brunch with some juice or chach on the side!!!
