Quick Mushroom Fried Rice

For the second day of BM#42 under Easy Tiffin Recipes , I made quick and easy mushroom fried rice from here . My family loves mushrooms and I have to use it two to three times in a week .

If I ask my husband to pick vegetables from the supermarket , one thing he always brought i.e. mushrooms and that too 3-4 packets . For me it’s opposite , I eat the mushrooms only in matar mushroom curry otherwise I kind of hate it. Sometimes I got sick of mushrooms as they want it in their rice , on toast , stuffed in puff pastry or else mushroom pakodas .Woo…it’s really hard to develop liking for something that you didn’t like since childhood. May be someday I would also like mushrooms in my rice but till then it will stay out of my picked vegetables.

Well talking about today’s recipe I also ate it but if I got a piece of mushroom in my spoon it has to be dropped in their plate. And they love getting extras from me. Nevertheless it is a super hit for mushroom lovers and as I said earlier this is a quick recipe and you may prepare it with leftover rice also. Slits start the recipe . Yum

Ingredients:
3 -4 cups cooked rice
1 cup mushroom, sliced
1 red onion , chopped
2 green Chilli , chopped
1 dried red Chilli , crushed
1 teaspoon ginger, grated
3-4 garlic cloves , chopped
1 cinnamon stick
2-3 cloves
1 teaspoon cumin seeds
Salt to taste
1 teaspoon garam masala
1/2 teaspoon peppercorn ,crushed
3 tablespoon olive oil

Method:
Heat oil in a pan , add cumin seeds , cinnamon and cloves. Stir and add ginger and garlic.
Cook for 2 minutes , add green and dried red chillies. Stir and add onion.
Cook till brown in color , add mushrooms , salt and pepper , garam masala and mix well.
Now add cooked rice and cook till everything is combined well and rice are fried .

Serve hot.
