Potato Croquettes (Croccette de Patate )

We are in the next edition of Blogging Marathon i.e , BM#37 and for the first week my theme is Stree food around the world. For the first day I have chosen potato croquettes from Itlay.In Italy, crocchette are made mainly with crushed potatoes or vegetables, like aubergines . They originate from Naples and Sicily, and are served as famous street food in pizzeria all around Italy.So let’s start the recipe . Ingredients:

For the potato dough
6 potatoes , boiled and mashed
100g Parmesan cheese, grated
Salt to taste
1/4 teaspoon pepper
Few parsley leaves , chopped

For coating
1/4 cup milk
1/2 cup Breadcrumbs
Oil for deep frying

For the filling
1/4 cup Mozzarella, grated
Salt to taste
A pinch of nutmeg

Method:
Peel the potatoes mash with potato masher. Add the rest of the ingredients and mix well.
Mix all the ingredients for filling and set aside.
Take a piece of the dough in your hands, and flattened it into an oval shape in the palm of your hand. Press the filling into the center and close the dough around the filling and then roll it around with your hands to form a croquette.

Pass each croquette in the milk and then in the bread crumbs. Put the prepared corquettes in fridge for one hour.

Deep fry the croquettes in oil until golden and crisp.

Serve hot with sauce.

Serve-6. Cooking time -20 minutes
