I had tried to make the Polish Pierogi with a filling of potato and cheese.The dish was light and mildly spiced in taste and surely a keeper recipe . Here in Ireland a very larget number of Polish people migrated in the 80’s and lived. Recently I made a Polsih friend in my daughter’s school.She is a very kind person and helped me a lot . When I cooked the pierogi ,I invited her to our house and offered her some to taste.She was very happy with the taste and texture and admired me that she had never got this kind of texture. According to her they were melt in mouth type and very tasty.
So let’s start the recipe .yum.

Ingredients:
2 big sized Potatoes
1/2 cup onion, chopped
1 garlic clove , minced
2 teaspoon olive oil
salt to taste
Freshly ground pepper to taste
1/3 cup cream cheese
For covering
2 cups all purpose flour
1/2 teaspoon salt
1/4 cup sour cream
water as required
Method:
For stuffing
Wash and chop potatoes in cubes and place them in a bowl with half cup of water. Let it cook on medium heat till potatoes are done.
Drain the potatoes in a bowl.
Heat a teaspoon oil in a pan , add onion and garlic , saute on low heat fro 10 minutes till brown.
Now add the browned onions and garlic in potatoes, mix well and add cream cheese in it.Add salt and pepper and mash the potatoes with potato masher.Let it aside to cool.
For covering:
In a bowl take all purpose flour, add salt and mix well. Make a well in the center and add sour cream. Combine and add water to make a soft dough.
Turn the dough into lightly floured counter and knead it 50 turns or 50 times.Cover the dough and let it rest for 10 minutes.
Make three balls of dough, take one ball on the floured counter , roll it to 1/4 ” thickness circle. With the help of cookie cutter and cut out the ends. o stick 8 small circles from it.
Now take one circle in hand , place a tablespoon of filling in it and cover it . Use water to stick the ends. Place them on a floured towel or tray to avoid sticking. Repeat the same with remaining circles and dough balls.
Boil water in a big pot , and drop the filled pierogi in it. Add 4-5 at a time or according to the size of pan. Let it boil for 3-4 minutes.
Drain from water and place them on lightly oiled surface. Serve with sour cream.You may browned them in a pan using little oil.
Serve and enjoy!!

I made a similar dish for R and I guess this is very similar to our momos with a different stuffing.
Same Pinch Sapana. I made pierogis too but without cream cheese 🙂 We loved it and I am sure these were just as yummy.
