Matar Kachori

Matar kachori is another famous street food of Delhi and the neighboring states of India along with the regular Khasta Kachori.There are some popular places where you could enjoy a variety of stuffed kachoris in Delhi.Few of the places are Hanuman Mandir CP,Kalkaji,Kamla Nagar Market,Hanuman Mandir Yamuna Bazzar ,Sharma Kachori wala,bikanerwala and of course Haldirams.

Usually the Matar kachoris are served with spicy aloo sabzi but you could also enjoy them with sweet and minty chutney and some other toppings like sev and pomegranate pearls.


Whenever we would go to the Hanuman Mandir CP we would always relished few plates of these flavorful,crisp and tempting kachoris. I remember one time I had this job interview in CP and we went there early in the morning .We only had light breakfast at home.As soon as I finished the interview we rushed to the Kachoriwala,but we couldn’t find any parking place.Finally,we had to ate the kachoris in the car while driving like crazy.;)

We loved to make the kachoris along with some other goodies on Holi.When guest would come at home to play holi,first we would all eat the kachori ,dahi halle platters and then play holi with colors.Some of the other famous Holi recipes which also happen to be street food of Delhi at my space are

Ingredients:
For Dough
2 cup all purpose flour
4 tablespoon oil
salt to taste
water as required

For Stuffing
1 cup green peas,fresh or frozen
2 green chillies
2 ” ginger piece
salt to taste
1/2 teaspoon turmeric powder
1 teaspoon red chilli powder
1 teaspoon cumin powder
1 teaspoon coriander powder
2 teaspoon fennel seeds,ground
1/4 teaspoon aseftida
1 tablespoon oil
oil for deep frying

To Serve
1/2 cup green chutney
1/2 cup sweet chutney

Method:
For dough
In a mixing bowl add the flour,salt and oil.Mix until crumbly.
Knead the dough using a little water .Keep the dough covered with damp cloth for about 30 minutes.

For stuffing
Boil green peas in water for 5-7 minutes.Drain and make a coarse paste of peas with ginger and green chilli using little water.
Heat a tablespoon of oil in a pan.Add aseftida and all the spice powders and salt.Stir and add peas mixture.
Cook for 3-4 minutes.Remove from heat and let it cool.Make small balls from the stuffing.

To make the kachoris.
Make small lemon sized round balls from the dough.Take one ball of dough and spread it with hands or roll a little using rolling pin.Place one ball of in the center and cover it from all sides with dough.
Roll or spread the kachori in hands.Make all the kachoris and cover them with kitchen towel.
Heat oil for deep frying in a wok or pan.Add 2 or 3 kachoris at a time and deep fry them for about 3-4 minutes on low to medium heat or until golden and crispy.
Drain them on paper towel.

Assembling
Place two kachoris in one serving plate .Break them little from top or in two pieces.Drizzle with sweet and green chutney.
Serve immediately.

Serve-4 Cooking time-45 minutes

Notes:
Make sure to fry the kachoris on low to medium heat to make them more crispy .
You could make the stuffing a day ahead and store in refrigerator.
Keep the fried kachoris in air tight container.Stays well for few days.
