Well I hope you all enjoyed my previous recipes of Colocasia/Taro roots/Arbi one in gravy form and the other prepared with sliced onions and tomatoes. I am back with one more recipe of my favorite vegetable :)In this recipe ,first I have boiled the Colocasia and then deep fry it in oil followed by coating it in lots of spices. Believe me it tastes incredible .
I like it very much and it’s favorite of everyone at my place. So I keep on expermenting with Colocasia to find new ways of cookig.Colocasia is a good source of Fibers , Antioidants and Vitamin B-Complex .This is the best and easiest method of cooking it , that gives this simple vegetable an exotic taste.Crunchy crust of this cuisine followed by soft texture of Colocasia along with spices really gives an entirely different experience .So let’s start the recipe.yum
Ingredients:
250 gm Colocasia (Arbi) ,smaller one
1 teaspoon green chilly, chopped
1/4 cup coriander leaves, chopped
Spices:
1/2 teaspoon Carom seeds (Aijwain)
1/2 teaspoon Turmeric powder
1/2 teaspoon Red chilly powder
1 teaspoon coriander powder
1/2 teaspoon Dried mango powder (amchur)/lemon juice
1/2 teaspoon garam masala
Salt to taste
Oil for frying
1 tablespoon Vegetable oil
Method:
Wash and boil Colocasia/taro roots in 2 cup water for 1 whistle.Cool and remove the skin.
Heat oil for frying in a pan , add peeled Colocasia and fry from both sides till golden in color.
Frying Arbi
Drain on paper towel and press them slightly with spoon .
Heat oil in a pan , add carom seeds , stir for 1 minute on low heat.
Add green chilly and all spices and salt. Keep the heat low.
Now add fried Colocasia , mix with spices and cook for 5 minutes.
Remove from heat and garnish with chopped coriander leaves.
Serve with chapati or Paratha.
If you like this You may also like Colocasia curry and Sukhi Arbi.
Serve-2. Cooking time-20 minutes.
Note: Don’t over cook Colocasia or else they will become sticky.
You can add make them with tomato gravy also.
