Kuska Biryani | Plain Rice Biryani

Khushka or kuska is a rice biryani made with spices, rice and ghee. It’s a lunch dish, primarily served with Kurma or Korma and is very popular in Southern India.I made this Biryani for second day of week 2, BM#48 under my theme Biryanis.

I served this biryani with black Chickpea curry and we enjoyed it .So let’s start the recipe.yum



Ingredients
:
2 cup basmati rice
1 onion,chopped
2 tomatoes , chopped
2 teaspoon ginger- garlic paste

2 bay leave
2-3 cloves
2-3 peppercorn
2 cinnamon stick

For paste
1/4 cup mint leaves
1/4 cup coriander leaves
2 green chillies

Spices
1teaspoon turmeric powder
1 teaspoon red Chilli powder
2 teaspoon coriander powder
1 teaspoon garam masala
Salt to taste

2 tablespoon yoghurt
1/2 cup milk or coconut milk
4 tablespoon oil
Few Coriander leaves,chopped
1 tablespoon Ghee

Method:
Wash and soak rice in enough water.Make a paste of the ingredients under “for paste “using a little water.
Heat oil in a pressure cooker and add cloves,cinnamon stick, peppercorn ,cardamom and bay leaves. Stir and add ginger -garlic paste. Saute till a little brown.
Add chopped onions , stir for few minutes till golden in color.Now add green paste , all spice powders and salt . Mix well.
Add chopped tomatoes and and cook till tomatoes are soft and oil comes out from sides of cooker.
Now add yoghurt and cook for 3-4 minutes. Finally add rice , milk and cover the lid.
Cook for 1 whistle or till rice are done .
Open the lid ,add chopped coriander ,ghee and serve hot with any gravy or as it is.
