Kenyan Curried Cabbage & Koriander Salad


For the second day of BM#36 under Africn Cuisine , my journey headed to Kenya and Lybia . One recipe called Kenyan curried cabbage and another is Lybian Koriander salad are presented today from my kitchen .
The curried cabbage is a very unique recipe in which cabbage are cooked with carrots and onions in milk and curry paste . The taste was rich and different from that we usually prepare at our home. And the seond recipe of salad is more like mexican salsa . We liked both the dishes with some bread and orange juice. So let’s start the recipe . Yum

Kenyan curried cabbage
Ingredients
:
1 small cabbage
1 large onion, sliced
2 carrots , grated
2 tablespoon butter
2 tablespoon plain flour
1/2 cup milk
1 teaspoon curry powder
salt to taste
1/4 teaspoon peppercorn , crushed

Method:

Heat butter in a pan and and sauté the onion . Add cabbage and carrots and cook until the cabbage are tender.

Mix 2 tablespoon flour with curry powder and milk , stir with spoon and mix until combined.
Make a room in the center and pour the flour paste in it. Cook for a minute and then add salt and pepper. Stir well, cook for 2-3 minutes.

Remove from heat and serve with pita .

Serve-4. Cooking time-25 minutes

Koriander Salad

This salad is of Lybian origin with strong Indian and Moroccan influence. It is served as an accompaniment or snack.

Ingredients:
1/2 cup Coriander leaves/ Koriander
1/2 cup Tomatoes, chopped
1/2 cup Red Onion , chopped
1 tablespoon Vinegar
1/4 teaspoon Black Pepper, crushed
1 tablespoon Olive Oil
Salt to taste

Method:
Take chopped salad in a bowl and toss together with the vinegar, pepper, olive oil and salt.

Serve with pita bread.

Serve-2. Preparation time-10 minutes

  1. I love cabbage and always like trying new recipes – with it. This one is great. I have an Indian friend from Kenya and he has told me about so many great recipes. Will have to ask him about this one.

  2. Wow.. Sapana thanks for sharing <3 actually i am on diet from few days 😀 brought a lots of cabbage for making cabbage soup ; i guess I can make out this recipe too 🙂 looks very healthy to me 🙂
