Kashmiri Mava Pulav/Zarda

We are now in Kashmir for our Indian states food cooking journey. Kashmiri cuisine is mainly based on Mutton dishes and there are more then 30 dishes of mutton in Kashmir.Usually Pandits don’t eat meat but Pandit’s of kashmir have eaten all types of meat except beef.Meat is cooked mostly and is an important part of kashmir Pandit identity.Some of the famous recipes are Rogan Josh  ,Yakhani, Zarda  etc. Kawah or green tea  is customary to serve in festivals and marriages.
I have prepared Zarda or Kashmiri mava pulav but my rice got overcooked and I didn’t get the desired consistency. I don’t have extra time to cook it again so posting the same.Recipe source here. So let’s start the recipe.Yum

Ingredients :

1 cup Basmati rice
1 cup Sugar
2 tablespoon clarified butter
10 Almonds , sliced
10 cashew nuts , sliced
1 tablespoon raisins
1/4 cup milk
1 Cinnamon stick
2-3 Cloves
2 Cardamom
2 drops Yellow food color
Few Saffron strands
3/4 cup water
To garnish
Candied fruits /tutti Fruti

Method:

Soak the rice in 1 cup water for 1/2 an hour .
make a sugar syrup by dissolving the sugar in a cup of water .
Heat 2 teaspoon of clarified butter in a pan and fry the nuts .Drain the nuts and set aside.
To the same pan add remaining ghee. Now add clove,cinnamon and cardamom.
Add drained rice , stir for 2-3 minutes and then add water.
Add milk and food color . Cook it covered .
Now add the sugar syrup,saffron and half of the fried nuts,cook till rice are done.

Remove it and garnish with the rest of the nuts and candied fruits.

Serve warm.

Serve-2. Cooking time – 30 minutes
