Everyone loves Dhokla , the sweet and savory puff cake made from gram flour. Yesterday I was craving for some dhokla and got this recipe to make instant dhokla in microwave. I tried it and it comes out so well that I had prepared it three times a day ,send some to neighbors too. So let’s start the recipe . Yum. See the original recipe here .
Ingredients : For making dhokla
1 cup Gram flour /Besan
1/4 cup Semolina /Rava/Suzi
2 tablespoon Lemon juice
1 teaspoon Ginger, grated
4 tablespoon Sugar
Salt to taste
1 teaspoon
Eno fruit salt
3/4 cup water or as required
For tempering:
2 Green chilly , slits
2 tablespoon Oil
1 teaspoon Black mustard seeds
5-6 Curry leaves
1/4 cup coriander leaves ,chopped
1 1/2 cup water
Method:
Take gram flour and semolina in a bowl and little water at a time. Stir until all lumps get dissolved. The batter should not be too thick or too thin in consistency.
Add ginger, salt , lemon juice and 1 tablespoon sugar in the gram flour batter. Keep it aside for 10 minutes so that batter becomes puffy.
For making dhokla, take a 7-8 inch diameter microwave safe bowl and grease it with some oil. After 10 minutes add eno fruit salt and mix well. Batter seems to become puffy. Now pour the batter in greased microwave safe bowl. Tap the bowl on surface gently so that the mixture gets even.
Cover the bowl and place it in microwave. Set the temperature to maximum for 3 minutes and microwave the batter. For checking, insert a knife in the batter if it sticks to the knife, microwave for 1 more minute and give 2 minute standing time. Insert knife again, it comes out clean , it’s ready.
For tempering: Heat oil in a pan Add black mustard seeds and curry leaves.
Now add green chilly as well. Add 1 1/2 cup water and rest of the sugar .Cook until water starts boiling and sugar melts completely.
Run knife all around the dhokla for separating it from bowl. Place a plate on bowl and flip it. Cut dhokla as per your preference. Now pour the tadka water on dhokla pieces with help of a spoon. Dhokla absorbs the water and becomes soggy.
Garnish with green coriander.
Serve- 6 pieces. Cooking time -( 7 minutes total)
Note: You may use coconut for garnishing. For better result sift gram flour and semolina.

i have a query i also have seen microwave dhokla
just want to know which vessel u used to make these
i have that plastic dabba which can hold idli stand
can i make in that one
so unlike the usual way when we steam the dhoklas in cooker in this one just batter is cooked not steamed is it
kindly clarify pls so i can try making them
thanks
Thanks Meena ! I have used regular microwave safe bowl. You may use any vessel which is microwave safe. Just keep one thing in mind that after adding eno fruit salt the batter doubles in size , so use bowl or vessel accordingly.
I think you are right that its cooked in microwave not steamed but the result is awesome.
Nothing beats this- a all time meal-breakfast, lunch, teatime or even dinner:)
