Homemade Paneer

Easy and full proof recipe to make soft and delicious paneer at home. Homemade paneer tastes better than store-bought ones and is very convenient as well.

What is paneer?

Paneer is Indian cottage cheese made with curdled milk by pressing it under heavyweights. The whey protein is separated from the milk while it is boiling by adding any sour ingredient like yogurt, lemon, vinegar or citric acid.

Paneer is widely used to make so many different curries and is a good source of protein for those who don’t consume meat.

Basic Ingredients for paneer:

Only two main ingredients are needed to make paneer at home.

  • Milk-Try to use whole full-fat milk for the recipe.
  • Yogurt-Whisked yogurt at room temperature is perfect to make paneer.

How to make paneer?

Paneer making at home is really the easiest thing. Once the milk is boiled either with off the get or keep it at low and start adding yogurt or whatever sour ingredient you are using. Keep stirring and adding until the whey is separated from the milk and you see clusters of curdled milk or curd.

This curdled milk is known as Chenna and it can be used to make rosogulla, sondesh and some other sweets and or paneer bhurji, cutlets, and paratha as well.

After that, all needed to be done is rinsing the cottage cheese and removing all the excess water in it. Later on, press it under a heavyweight for an hour or so and cut in desired shapes.

Storage and Uses:

Store the panner in the refrigerator and use it within one or two days to make curries or however you’d want to use it.

You may use it to make Paneer butter masala, Makhani Paneer, Paneer Biryani, Paneer kheer, Paneer Palak and many more.

Ingredients
  

  • 1 liter full cream milk
  • 1/4 cup plain yogurt

Instructions
 

  • Boil milk in a pan. Once it starts boiling lower the heat.
  • Add a tablespoon of yogurt at one time and stir it continuously. Keep stirring and adding yogurt until all water separates from milk.
  • Transfer the cheese into a strainer lined with a muslin cloth. Wash under running tap water.
  • Squeeze all excess water and wrap it in a clean and wet kitchen towel.
  • Put a heavyweight on it for an hour. Set it in the refrigerator.
  • Take out from freeze and cut in the desired shape. Use as required.
  • Store in an airtight container in the refrigerator.

Notes

  1. Wash it thoroughly under running water to remove the smell of yogurt.
  2. Squeeze all excess water before placing it for shaping.
