Soup is a liquid food, served warm , generally made by combining ingredients such as vegetables with stock or another liquid. Traditionally soup are of two types thin and thick .
Today I have prepared potato soup with lots of herbs . The flavored herbs gave this soup a unique aroma and distinguished taste.
History says that the Irish were the first to seriously consider the potato as a staple food and introduce them into making soup. A distinctive refreshing touch with aromatic flavors oozing from oregano, thyme, rose merry and basil. Apart from following the original recipe I gave a twist of using dried mint leaves and the experiment really gave a soothing effect resulting from the magical blending of herbs .
I was thinking potatoes are normally used in every other recipe , how come Irish invented this heavenly soup. What made them to think so innovatively giving a complete different touch to normal food. Sometime food also make me feel the cultural richness of the region the food recipe I try to make of. Yes it is true food also gave philosophical value to the culture of region and community. That’s why I like to cook my every recipe with love and passion to put every taste into it that exists. And this soup really fulfill all these requirement. Serve it with love and affection to people you admire or someone you like to admire you. Anyways I loved it so much and recommended you all to try it once.
So my today’s soup goes under International dishes theme for alphabet “H ” . Let’s start the recipe .yum

Ingredients:
2 potatoes , boiled and cubed
1 red onion ,chopped
1 1/2 cup milk
2 cups water
1/4 cup butter
2 tablespoon All purpose flour
1/2 teaspoon dried Rosemary
1/2 teaspoon dried Thyme
1/2 teaspoon dried Basil
1/2 teaspoon dried Mint
1/2 teaspoon black peppercorn , crushed
Salt to taste
Method:
Place potatoes and water in a vessel and cook till potatoes are mashed properly with water. Cool and blend to form a paste. Set aside.
Heat butter in a pan , add red onion , sauté for a minute .
Add all dried herbs , salt pepper and all purpose flour in it. Stir gently.
Add milk slowly with continuous stirring to avoid lumps . Now add potato paste and stir. Cook for 5-7 minutes.
Remove from heat and serve with grilled bread.
Serve-2. Cooking time -30 minutes

Its been raining heavily almost every day over here. I would love to try this herbs infused potato soup. That creamy thick texture with toasted bread are simply spot on.
