Fuzian Fried Rice

The name of todays dish came from the Fujian, a province on the southeast coast of mainland China.

Fujian cuisine, with an emphasis on seafood, is one of the eight great traditions of Chinese cuisine. I have tried to recreate the veg version of Fujian fried rice and replaced sea food with mushroom and broccoli. The pepper flavored rice along with vegetables in saucy gravy turns out to be perfect combination for a wonderful lunch or dinner . I am glad I tried this wonderful dish . This will be my post For alphabet “F” under International /Fusion Food theme . So let’s start the recipe . Yum

Fustian Fried rice
Fuzian Fried rice

Ingredients:
For the Fried Rice
4 cups cooked rice
1 tablespoon oil
Salt to taste
1/2 teaspoon pepper corn powder

For the Gravy
1 onion, chopped
1/2 cup broccoli, florets
1/2 cup Carrot, diced
2/3 cup Button mushroom, diced
1 cup Tomatoes, diced
3 green chillies , slits
2 tablespoon soy sauce
1 tablespoon Sugar
1/2 teaspoon salt
1 teaspoon White pepper powder
2 cup vegetable Stock
2 teaspoon Corn starch
2 tablespoon Sesame oil

Method:
Heat 2 tablespoon of oil in a wok over medium heat, Add the rice and mix well .Add salt and pepper and set aside.

For gravy:

Heat sesame oil in a wok , sauté carrots, broccoli , onion , tomatoes and shiitake mushroom over medium heat for 2 minutes. Add vegetable stock and bring it to boil.
Add soy sauce, sugar, and salt. Mix well and bring to boil again.
As soon as it is boiling, add sesame oil and white pepper powder for flavoring. Add corn starch dissolved in 1/2 cup water.

In a rice plate , place 2 scoops of rice and top with 1 scoop of gravy.
Serve it hot.
