Gujarati Thali

If you are regularly visiting my blog you must have known that We are running a month long mega marathon.This is  the second week of mega marathon and we will be showcasing recipes from Indian states.

For the first day I am taking you to the state of Gujarat.The cuisine of Gujarat consists of a wide variety of food.The typical thali consists of rotli ,dal ,kadhi ,rice and shaak. However.However the festive thali would have more than dozen of dishes.

I wanted to make simple thali so prepared only the simpler dishes with the ingredients available in my kitchen.

Ringan Batata nu Shaak

Ingredients:
4 small eggplant,diced
1 potato,diced
1 tomato,chopped
2 green chilli,chopped
1 teaspoon ginger,grated
2 garlic cloves,chopped
1 teaspoon mustard seeds
a pinch aseftida
few curry leaves
1-2 dry red chilli
1/2 teaspoon turmeric power
1/2 teaspoon chilli powder
1 teaspoon coriander powder
1 teaspoon cumin powder
2 teaspoon sugar/jaggery
salt to taste
water as required

2 tablespoon oil
few coriander leaves,chopped

Method:
Heat oil in a pan or wok.Add mustard seeds,aseftida and stir for a minute.
Now add dry red chillies,curry leaves garlic and ginger.Saute for a minute.
Add tomatoes and green chillies. Stir and add all the spices powder,sugar and salt.Mix well and cook till tomatoes are soft.
Add potatoes and eggplant along with half a cup water.Cook covered until potatoes and eggplant are tender.
Remove from heat and garnish with coriander levaes.
Serve warm with rotli.


Tindora nu Shaak

Ingredients:
100 gm Tindora/Ivy gourd,cut in slits
1/2 teaspoon mustard seeds
a pinch aseftida
1/4 teaspoon turmeric powder
1/4 teaspoon chili powder
1 teaspoon dhania jeera powder
salt to taste
1 tablespoon oil
few curry leaves

Method:
Heat oil in a pan .Add aseftida,nustard seeds and curry leaves.
Add tindora , turmeric powder , chilli powder , dhania jeera and salt.
Mix well ,cover and let it cook till tindora are done.
Remove from heat and serve hot with thepla or rotli.

Ringan Toor Daane nu Kadhi

Ingredients:

1/2 cup green toor seeds
1/2 cup eggplant,diced
2 cup buttermilk
1/4 cup gram flour/besan
1 teaspoon mustard seeds
1 teaspoon garlic,chopped
few curry leaves
1/2 teaspoon turmeric powder
1 teaspoon chilli powder
1 teaspoon coriander powder
salt to taste
a pinch aseftida
2 tablespoon ghee/clarified butter
Water as required

Method:

In a bowl add toor seeds and water.Cook,covered for 10-15 minutes .Now add eggplant and cook for another 5 minutes more.
Drain the water rand set aside.
In a mixing bowl add buttermilk,besan ,salt ,red chiili ,turmeric and coriander powder.Mix well with balloon whisk
Heat oil in a big pan or cooker .Add aseftida ,curry leaves and mustard seeds.
Stir and add chopped green chilies and garlic.Saute for a minute.
Add the buttermilk -besan mixture .Add 1 cup water and cook for about 20 minutes.
Remove from heat and serve hot with rice.

Doodhi Thepla

Ingredients:
1/2 cup lauki/doodhi/bottle gourd,grated
1 cup wheat flour
1 teaspoon salt
1/4 teaspoon turmeric powder
a pinch aseftida
1 teaspoon ginger ,grated
1 teaspoon garlic,grated
salt to taste
1/2 teaspoon sugar
few coriander leaves,chopped

1 tablespoon oil

Method:

In a mixing bowl add all ingredients .Mix well and knead a firm dough , use little wate rif required.
Let the dough rest for some time.
Make 6 small balls from the dough.Dust one ball with dry flour , roll out into a circle .
Transfer into a preheated pan or tava .Cook from both sides using little oil.
Serve hot.

Rotli

Ingredients:
1 cup wheat flour
salt to taste
water as required
2 teaspoon oil
Maida for dusting
Ghee to smear

Method:
In a mixing bowl ,add wheat flour,salt and oil.Knead a soft and fine dough using enough water.
Make 6-8 small balls from dough.Dust one ball with maida and roll into a thin circle.
Heat a tava or pan and cook the rotli from both sides.
Smear with ghee and serve hot.

Chaas

Ingredients:
1 cup butermilk
1 teaspoon green chilli,chopped
2 teaspoon coriander .chopped
salt to taste.

Method:

Mix all ingredients in a jug .Serve chilled.

Mango Pickle

Ingredients:
1 cup raw mango ,chopped
1/4 cup pickle masal(store bought)
2 teaspoon oil

Method:
Mix all ingredients in a bowl.
Transfer in aglass jar.
Refrigerate till use.
