Ghee Bhat

Ghee Bhat is a signature Bengali style rice dish that can be served with any veg or non vegetarian side dish.However we preferred this rice as such and did not really feel like need of any curry to pair with.


I am an ardent fan of rice based dishes specially the one pot meals.This is a very simple and delicious rice dish.The addition of ghee that makes it more rich and divine.Normally Gobindhobhog rice are used to make Bengali pulao and rice dishes as I couldn’t find them I used Royal Basmati rice.I am telling you guys when I made all these simple yet flavorsome Bengali recipes for the series ,I totally fell in love with each one of them.

Ingredients:
2 cups basmati rice or Gobindobhog rice
3 cups vegetables,chopped (carrots,beans,cauliflower,potato,broccoli,peas,capsicum)
1/4 cup ghee/clarified butter
2 bay leaves
3-4 cardamoms
3-4 cloves
2 cinnamon sticks
salt to taste
1 teaspoon sugar
2 tablespoon cashew nuts
2 tablespoon almonds
2 tablespoon raisins(I didn’t used)


Method:
In a heavy bottom pan boil water with a teaspoon of ghee and salt.
Add washed rice and cook for 10-15 minutes or until rice are almost done.
Spread the rice in a big plate or baking tray to stop further cooking and toss them with a fork.
Heat ghee in another big pan and add bay leaves,cinnamon,cardamom and cloves.
Stir and add cashew nuts ,almonds and raisins.
Now add the cooked rice,stir gently to combine.

Remove from heat and serve hot with any tarkari.
