Phirni Falooda-A rich and creamy rice pudding aka phirni served with rose flavored cornstarch noodles aka falooda.

This week I will be posting combo desserts recipes means two desserts served together. So while looking for some ideas on what to cook I found this amazing idea of serving phirni and falooda on Sanjeev Kapoor’s. I immediately bookmarked the recipe to try for combo sweets.

The dessert turned out so amazing that my girls finished most of it in just a few seconds. They literally went crazy for this chilled sweet and little one ate it assuming it was ice cream.

My family lovesKulfi Falooda and that was the main reason I tried this amazing combination of falooda with phirni as I knew they would love it for sure. I used homemade falooda noodles for this recipe and it turned out just perfect.

As we do not get falooda noodles here, I started making my own at home. I wonder why I never tried making the noodles at home before as it is ridiculously easy. I will post the recipe for the noodles real soon, till then enjoy the tempting combo dessert.

Phirni Falooda

Ingredients
  

  • 1/4 cup basmati rice
  • 2 cups whole milk
  • 2 tablespoon honey
  • few saffron strands
  • 2 tablespoon rose syrup
  • 2 tablespoon nuts, chopped
  • 2 cups falooda noodles, cooked (homemade or store bought)

Instructions
 

  • Wash and soak basmati rice in enough water for about 3-4 hours or until overnight.
  • Coarsely grind the soaked rice in the coffee grinder for a minute.
  • In a heavy bottom, pan add milk and ground rice and let it boil on simmer.
  • Stir occasionally, add saffron and let the phrini cook for 10-15 minutes or until it starts thickening.
  • Once you get the desired thickness of the phirni add honey or your choice of sweetener and remove from heat.
  • Let the phirni cool completely in the refrigerator.
  • Into the serving, glasses add falooda noodles, rose syrup, and phirni and repeat alternate layers . Top with chopped nuts.
  • Serve chilled and enjoy.

Notes

For best results chill the phrirni and falooda noodles before assembling.
Add your favorite nuts and dried fruits.
