Dhabe Wali Dal is a creamy and tasty melody of three dals cooked together with lots of spices, aromatics, and herbs.
What is Dhabe wali Dal?
Dhabe wali dal is an Indian roadside hotel-style lentil cooked at home. Most of the time they would add a smoked coal piece on top of the dal vessel to add that smoky charred effect. I could not do it, but if you have access to that please do try and enjoy the smoky Dhaba style dal.
This is one of my favorite dal from the roadside dhabas of Delhi and Punjab. We used to go to the dhabas and always would order this dal for sure.
Basic Ingredients for dhabe wali dal:
The basic ingredients to make the dal are listed below.
- Firstly, lentils-I use three kinds of dals moong, too, and masoor but you can use any one or mix of your choice of dal.
- Ghee-The only one thing that makes it more delicious is ghee, but you may replace it with oil as well.
- Tomato-Add 2-3 medium-sized juicy tomatoes.
- Garlic-For that smoky garlicky flavor.
- Dried fenugreek-Adds a whole lot of flavors and taste.

How to make Dahbe wali dal?
The process starts with boiling the washed dals until soft. Later on, make the tempering with all the ingredients listed and pour this tadka over the cooked dal. Finally, simmer until your desired consistency and serve the dal with a dollop of ghee.
Serving suggestions:
I make papad and mint chutney for our dinner to pair with dal, roti, and rice and that’s how we eat our night meals. Literally , papad mistakes a huge difference in it.

Dhaba Dal
Ingredients
- ¼ cup toor dal
- ¼ cup chana dal
- ¼ cup moong dhuli dal
- 2 tomatoes chopped
- 2 green chilles, chopped
- 2" ginger piece grated
- 4 garlic cloves minced
- 1 onion finely chopped
- 1 teaspoon cumin seeds
- 2 dried whole red chilli
- a pinch aseftida
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon red chilli powder
- 2 teaspoon kasoori methi
- salt to taste
- 4 tablespoon ghee
- water as required
- ¼ cup coriander leaves chopped
Instructions
- Wash and soak the three dals in enough water for about 2 hours.
- Drain the water and cook the dals with a pinch of salt, turmeric and 3 cups of water for about 2 whistles.
- Let the pressure release naturally and set the cooker aside.
- In a sauce pan, add ghee, cumin seeds, aseftida, methi leaves, garlic, ginger and whole red chilli and half teaspoon red chilli powder. Stir and keep a teaspoon of the tadka aside.
- Into the same pan add onions and fry until they are slightly golden.
- Add turmeric, coriander powder, garam masala, red chilli and salt and stir.
- Add in tomatoes and green chilli and cook until ghee separates from the sides if the pan.
- Pour the tadka into the cooked dal, add coriander leaves and also add the tempering that we kept aside.
- Serve and enjoy.
