It’s Amaranths season here in Delhi and we want to try all the dishes made from this nutritious green leafy vegetable.
I am sharing recipe of a healthy combo dish made with split Moong dal and amaranths leaves. So Let’s start the recipe.yum
Ingredients:
250 g Amaranths leaves
1 cup split green gram /Dhuli Moong dal
6-8 garlic cloves , chopped
2 onions , chopped
4 tomatoes , chopped
4 green chillies
2 teaspoon ginger, grated
1 teaspoon cumin seeds
1 pinch asefetida
Spices:
1 teaspoon turmeric powder
1 teaspoon coriander powder
Salt to taste
1 teaspoon red chilly powder
1 teaspoon garam masala
1/2 cup clarified butter/Ghee
Water as required

1 teaspoon ghee/clarified butter
Method:
Wash and chop amaranths leaves . Boil Moong dal and amaranths leaves with a pinch of turmeric powder and salt in 3 cups of water.
Heat clarified butter in a tadka pan , add Asefetida and cumin seeds. Sauté for1 minute.
Add chopped garlic and ginger . Sauté till a little golden in color.
Now add chopped onion and sauté till golden . Add all spices and salt , mix well.
Add chopped tomatoes and green chilly . Cook till ghee comes out from edges.
Add this masala over cooked dal and let the dal cook again for 7-10 minutes.
Remove from heat and serve hot with rice , chapati or Paratha.
Heat 1 teaspoon ghee in a pan , add red chilly powder and quickly pour this over dal in serving bowl.
Serve-3. Cooking time -30 minutes
