Cuban Black Bean Salad

The next bookmarked recipe I am presenting today is this healthy and colorful black bean salad .It was made along with mojo sauce for mega marathon last month.The sweet and sour mojo sauce dressing , the crunchy corn , bell peppers and the soft black beans made this salad a wonderful ,delicious and filling salad.


The best part was that my daughter loved this crunchy salad and even my lo was eating some beans and enjoyed munching it.

Dish-Cuban Black Bean Salad

Ingredients:
1 can black beans,drained & rinsed
2 cherry tomatoes,sliced(I used diced plum tomatoes)
1 cup bell pepper ,chopped (red ,yellow and green )
1 red onion,chopped
1 cup corn
1 teaspoon oregano
1 teaspoon chives
1 tablespoon parsley,fresh or dried
2 tablespoon honey
2 teaspoon lemon juice
1/4 cup mojo sauce
2 teaspoon ground cumin
salt to taste

Method:
In a mixing bowl add all ingredients except mojo sauce.
Add mojo sauce just before serving.
Serve and enjoy.

Note:
Store in air tight container for 3-4 days in refrigerator.
