Corn Fritters

We are in the third week of BM#53 and my theme for the week is Fritters.For the first day I made corn fritters and adapted the recipe from Pioneer women .The day I made the fritters I had sweet corn kernels only and I was a bit skeptical to use them for the recipe thinking they might turn out too sweet.But the cayenne pepper and scallions gave the fritters a very nice flavor. My daughter refused to taste the fritters knowing that I used sweet corn in it. On insisting she tasted and guess what she wanted them more and more .so let’s start the recipe.yum

Ingredients:
2 cup sweetcorn kernels
3/4 cup all purpose flour
1/4 cup scallions ,chopped
1 cup milk
1 teaspoon cayenne pepper
1 teaspoon sugar
1 teaspoon baking powder
salt to taste
Peppercorn to taste
Canola oil,for frying

Method:
In a mixing bowl sift together flour,baking powder,salt,peppercorn,cayenne and sugar .
Fold in corn kernels , scallions .Add milk slowly to avoid lumps and mix well.
Heat oil in a pan or wok and drop a tablespoon of batter ,few at a time.
Fry,flipping from both sides until golden.

Drain on paper towel .Serve hot with ketchup or any other dip.

Serve-4 Cooking time-20 minutes

Notes :Make sure to sift the flour for best results.
Use fresh or frozen corn kernels whichever suits .
